Introducing the first bar of 2021 FU WAN SEASON CHOCOLATE PROJECT , Yu-Lan, a 70% dark chocolate scented with white champak flower. White champak is very common to encounter in Taiwan’s daily life, wherever in the silent temples, in grandma’s gardens, on the taxis or even in the traffic sold by the peddlers. It’s like the river connecting everyone’s memory floating through our life. 80% of the white champak in Taiwan is produced in Ping Tung, the county Fu Wan is located at. This is why we can get the best quality white champak with gorgeous enchanting aroma. 


The making of this Yu-Lan chocolate relies on the unique methodology – the SCENTING technique from Fu Wan's “FIDARGS craftsmanship”. We dried the flowers with many different skills to keep the ultimate floral, and put the dried flowers and the chocolates together for several weeks to absorb the aroma as much as possible. Meanwhile the chocolates also get aged properly to develop more round and sophistigate flavor.



YUE-TAO (Shell Ginger)

Inspired by the sticky rice dumplings and midsummer rituals, this festive chocolate bar for peace, health and love.

Introducing the Summer bar of FU WAN SEASON CHOCOLATE PROJECT , Yue-Tao, a 70% dark chocolate, made with the cocoa bean which is simmered in the fragranced water boiled with shell ginger leaf. The making of this Yue-Tao chocolate relies on the extended concept of INFUSING technique from Fu Wan's “FIDARGS craftsmanship”. Inspired by the cooking process of traditional “sticky rice dumpling - Zong Zi”which is usually made and shared during the “Dragon Boat Festival – Duan Wu”, we cook the leaf of the shell ginger, and then simmer the raw cacao bean for several minutes to absorb the herbal notes. In the meanwhile, the flavor of the cacao turns softer and smoother as if it was swimming in the fragranced water relaxedly. What more interesting is, after proper aging, the spicy aroma of the shell ginger itself will come out gradually. During Duan-Wu people make rituals such as hanging healthy herbs on the front door, drinking nutritious concoctions, and even stands an egg on its end at exactly 12:00noon, for protection from evil and disease for the rest of the year. This chocolate bar launched during this season is a bless from Taiwan to the world to pray for peace , health and love.

 


YU-GUEI (Taiwan Cinnamon)

The fragrance of cinnamon to Taiwanese food culture is as the lipstick to female make up. A little touch-up simply brightens everything. A sprinkle of cinnamon implies warmth and exotic atmosphere. From traditional glutinous rice for banquet to daily soothing beef broth; from refreshing cappuccino to sweet and sour apple pie, when it comes to comfort food, cinnamon always holds a special place in our hearts. Taiwan#1 70% Ping Tung Dark Chocolate is selected to pair with Taiwan indigenous cinnamon. Multiple skills from Fu Wan FIDARGS Craftsmanship are adopted in the process, which are G-Grinding and S –Scenting. From the Scenting concept we extend a “Smoking“ skill, with which we smoke the cacao beans with cinnamon leaves and then add the cinnamon powder into the smoked cacao beans to grind together. Locally grown in Ping Tung, these cinnamon trees are planted environmentally friendly and are all 8 years old or above. That is why they contain high percentage of cinnamaldehyde and eugenol , and few coumarin. Comparing to the imported cinnamon, they are more gentle in herbal therapy. Also, they have been proven effective both in ancient oriental and modern medical sciences. Together we grind some local shell ginger into the chocolate, it emerges like a mysterious yet soothing cola from the woods.
