福灣巧克力製程模式是「Tree-To-Bar」,從種植巧克力樹一路做成巧克力,這樣完整保留巧克力風土味道的品牌,全球只有不到十個商家可以做到。Tree to Bar比常見的Bean to Bar 更多了從可可樹的培育、可可果的採集到發酵的前置階段。可可豆的發酵的過程,會引發獨一無二的不同款風味,因此福灣每款巧克力,都會有專屬的香氣。

The producing method Fu Wan adopted is “Tree-to Bar”; it means that chocolate production line starts from the harvest. In the world, less than 10 chocolate stores are capable of doing this since it requires really short food mile. In comparison with “Bean-to –Bar”, “Tree-to-Bar” has a few more steps, cultivation, harvest and the fermentation. The fermentation of the cacao beans creates different aroma. With this brand-new way of making chocolate, the makers have complete control over the whole process – also the aroma. That’s why every single piece of our chocolate has its own special tasting notes.
