Introducing the first bar of 2021 FU WAN SEASON CHOCOLATE PROJECT , Yu-Lan, a 70% dark chocolate scented with white champak flower. White champak is very common to encounter in Taiwan’s daily life, wherever in the silent temples, in grandma’s gardens, on the taxis or even in the traffic sold by the peddlers. It’s like the river connecting everyone’s memory floating through our life. 80% of the white champak in Taiwan is produced in Ping Tung, the county Fu Wan is located at. This is why we can get the best quality white champak with gorgeous enchanting aroma.
The making of this Yu-Lan chocolate relies on the unique methodology – the SCENTING technique from Fu Wan’s “FIDARGS craftsmanship”. We dried the flowers with many different skills to keep the ultimate floral, and put the dried flowers and the chocolates together for several weeks to absorb the aroma as much as possible. Meanwhile the chocolates also get aged properly to develop more round and sophistigate flavor.
