Room temperature for dark and milk bars
Keep sealed bars between 18°C and 22°C, away from direct sun and kitchen steam. A closed cupboard or pantry works better than a windowsill. Once opened, fold the inner foil tight and finish the bar within two to three weeks so cocoa butter does not pick up nearby spices or coffee aromas.
Summer parcels and warm delivery days
If a carton feels warm when the courier hands it over, open the box and let bars rest at room temperature before you taste. Quick chilling can cause fat bloom, the pale film that looks like dust but is harmless cocoa butter. Wait until the chocolate feels cool to the touch, then store it as usual. Bonbons, truffles, and filled pieces
Filled chocolates need cooler, stable air. Aim for 15°C to 18°C if possible, and eat them within the best-by date printed on the sleeve. Humidity above 70 percent can dull the shine on enrobed pieces, so avoid leaving gift boxes near kettles or open bathroom doors. Share within a few days of opening for the best snap and ganache texture.
Common questions
Should I refrigerate Fuwan bars? Only if your home stays above 28°C for days at a time. Use a sealed container, bring the bar back to room temperature slowly, and enjoy within a week. Everyday fridge odors can linger on fine chocolate.
Can I freeze gift sets? We do not suggest freezing bars that you plan to serve soon. Freezing is a last resort for unopened stock you must hold for an event. Thaw overnight in the fridge, then let the package sit sealed at room temperature before unwrapping.
What if I see white marks? Fat bloom changes appearance, not food safety. Melt the chocolate for baking or hot drinks, or enjoy it as is. Sugar bloom feels gritty and often follows condensation. Keep future boxes dry and sealed.
